Ingredients

  • 3/4 pound lg. sea scallops
  • 2 teaspoon extra virgin olive oil, approximately
  • 2 navel oranges, carefully peeled
  • 3/4 pound sm. bay scallops
  • 1 teaspoon fresh dill, minced

Directions

  1. Preheat oven to 450 degrees. Put the 3/4 lb large sea scallops in a 9 inch baking dish, drizzle with extra virgin olive oil. Using a small sharp knife, carefully cut the orange sections from the white membrane, working over the baking dish to catch the juice. Using your hands, squeeze out all other juice from the membranes over the dish. Arrange orange sections among scallops. Bake for 8 min. Remove baking dish from oven and turn heat to broil. Add in the 3/4 lb small bay scallops to the dish; sprinkle with dill. Broil just till all scallops are cooked, 3 to 4 min.Recipes for scallops usually are fried, I liked this one since it is baked.
