  • Baked Potatoes With Onion Sauce

    Ingredients

    • 4 lrg baking potatoes
    • 1 Tbsp. butter
    • 4 Tbsp. half-and-half
    • 1 x egg yolk, beaten
    • 1/4 tsp black pepper
    • 1/2 c. Swiss cheese, grated Onion Sauce
    • 1/4 c. Parmesan cheese
    • 2 Tbsp. green onion, chopped
    • 2 Tbsp. butter
    • 2 Tbsp. all-purpose flour
    • 1/2 c. lowfat milk
    • 1/2 c. half-and half salt, to taste

    Directions

    1. Scrub and dry potatoes. Prick with a fork and rub with butter. Bake about 1 hour or possibly till tender. Cut a slice from the top of each potato.
    2. Scoop out pulp into a bowl, leaving about 1/4-inch rind in potato skin.
    3. Mash the potatoes till free from lumps. Beat the butter, half-and-half and egg yolk. Stir in black pepper and Swiss cheese. Refill potato skins. Make a well in the potatoes. Fill with the Onion Sauce. Sprinkle with Parmesan cheese. Broil till browned.
    4. Onion Sauce:Saute/fry onion in butter. Add in flour and cook 1 minute. Slowly, pour in lowfat milk and half-and-half, stirring constantly. Salt to taste. Cook till thickened.
