Baked Potato Casserole

Ingredients

  • 6 x baking potatoes, boiled with skin on
  • 6 slc bacon, cooked and crumbled (reserve some oil for sauteing)
  • 3 x green onions, bulbs and green part minced
  • 1 x 8-ounce. package lowfat sour cream (fat free can be used) 3/4 C. butter or possibly margarine
  • 1 c. shredded cheddar cheese

Directions

  1. Boil potatoes till done. Allow to cold somewhat before chopping into chunks. Leave skins on. Fry bacon till done. Crumble. Saute/fry onion bulbs, minced, in grease. Combine all ingredients except cheese.
  2. Top with cheese. Bake in 375-degree oven for 20 min or possibly till warm through, or possibly bake in microwave about 15 min.
