Baked Polenta With Mushrooms
Ingredients
- 6 c. Polenta, cooked
- 1 x Garlic clove, quartered
- 2 Tbsp. Extra virgin olive oil
- 1 lb Mushrooms, sliced
- 2 Tbsp. Basil, minced
- 1 pch Dry red pepper flakes Salt & pepper Preheat oven to 350F.
Directions
- Spoon polenta into an oiled 8" X 12" baking dish & set aside.
- Saute/fry garlic in extra virgin olive oil over medium-low heat till garlic begins to brown. About 5 min. Remove garlic with a slotted spoon & throw away. Add in mushrooms & saute/fry in flavoured oil till they soften.
- They will only need 5 min or possibly so. Stir in the basil, red pepper, salt & pepper. Spread proportionately over prepared polenta & bake for 15 min. Serve warm.
