Baked Pineapple Stuffing
Ingredients
- 1 can crushed pineapple - (20 ounce) undrained
- 1/4 c. evaporated lowfat milk
- 1 c. packaged cornbread stuffing crumbs
- 1/2 c. sugar - (to 3/4 c.)
- 1/4 c. melted butter or possibly margarine
- 3 x Large eggs beaten
Directions
- Lightly grease the bottom and sides of a 3 1/2-qt crockpot (you may use a baking dish which fits in a larger crockpot). Combine all ingredients; pour into the crockpot. Cover and cook on HIGH 2 1/2 to 3 hrs. Good with baked ham.
- This recipe yields 4 to 6 servings.
