Baked Pasta With Sausage, Tomatoes and Cheese
M husband loves this dish. I use hot Italian sausage, but you can also use the sweet variety. Becasue there are only 2 of us, I make to smaller casseroles instead on the one larger, and freeze the second one. This freezes wonderfully. Ingredients
- 1 pound uncooked penne pasta
- 1 pound hot or sweet Italian sausage
- 1 cup chopped onion
- 2 garlic cloves minced
- 1 Tablespoon tomato paste
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cans petite-diced tomatoes, undrained, (14.5 ounces each)
- 1/4 cup chopped fresh basil
- Cooking spray
- 1 cup shredded Mozzarella cheese
- 1 cup grated Parmesan cheese
Directions
- Preheat oven to 350 degrees.
- Cook pasta according to package directions, drain and set aside.
- Remove casings from sausage. Cook sausage, onion and garlic in a large non-stick skillet over medium heat until browned, stirring to crumble sausage.
- Add tomato paste, salt, pepper, and tomatoes, and bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.
- Combine cooked pasta, sausage mixture and basil. Place half of pastaq mixture in a 4-quart casserole coated with the cooking spray. Top with half of the mozzarella and half of the Parmesan. Repeat layers, ending with mozzarella and Parmesan on top.
- Bake at 350 degrees for 25 minutes until bubbly and cheese is melted.
