M husband loves this dish. I use hot Italian sausage, but you can also use the sweet variety. Becasue there are only 2 of us, I make to smaller casseroles instead on the one larger, and freeze the second one. This freezes wonderfully.

    Ingredients

    • 1 pound uncooked penne pasta
    • 1 pound hot or sweet Italian sausage
    • 1 cup chopped onion
    • 2 garlic cloves minced
    • 1 Tablespoon tomato paste
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 cans petite-diced tomatoes, undrained, (14.5 ounces each)
    • 1/4 cup chopped fresh basil
    • Cooking spray
    • 1 cup shredded Mozzarella cheese
    • 1 cup grated Parmesan cheese

    Directions

    1. Preheat oven to 350 degrees.
    2. Cook pasta according to package directions, drain and set aside.
    3. Remove casings from sausage. Cook sausage, onion and garlic in a large non-stick skillet over medium heat until browned, stirring to crumble sausage.
    4. Add tomato paste, salt, pepper, and tomatoes, and bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.
    5. Combine cooked pasta, sausage mixture and basil. Place half of pastaq mixture in a 4-quart casserole coated with the cooking spray. Top with half of the mozzarella and half of the Parmesan. Repeat layers, ending with mozzarella and Parmesan on top.
    6. Bake at 350 degrees for 25 minutes until bubbly and cheese is melted.
