Baked Oatmeal w/ Blueberries

This is another Amish dish that I adore. It's a great way to get kids to eat oatmeal. This recipe is with blueberries but you can add any fruits you like. I have made it with raisins, blueberries, peaches, strawberries, berry blend mix, dried fruits they are all good. I have mixed fruits together and never had a bad one. This calls for 3 cups of oats I like to use 2 cups of quick or rolled oats and 1 cup of steel cup oats for added texture. Also it calls for 1 cup of brown sugar but I only use a 1/2 cup. Its baked and you scoop or cut out a serving you can eat it plain hot or cold and in Lancaster its served in a bowl with milk like cereal. great for breakfast, lunch or snack.

Ingredients

  • 3 cups of Oats
  • 1 cup melted butter or butter substitute
  • 2 eggs beaten
  • 1 cup milk
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 cup brown sugar
  • 1 bag of frozen blueberries

Directions

  1. Preheat oven to 350
  2. Spray a 2 qt oven proof baking dish w/ cooking spray
  3. Melt butter in microwave
  4. Meanwhile in a lg bowl mix oats, baking powder, salt and brown sugar together.
  5. In a medium bowl whisk eggs and milk and add melted butter
  6. Pour into oat mixture stir very well and add blueberries and any other fruits you want
  7. Pour into the baking dish, bake uncovered for 30 to 40 mins
  8. let cool 15mins and serve
