Baked New Potatoes And Yellow Peppers

Ingredients

  • 10 med new potatoes, cut into bite-sized pcs
  • 3 x yellow bell peppers, quartered, seeded
  • 1/2 c. extra virgin extra virgin olive oil
  • 1 1/2 tsp sesame oil Coarse salt
  • 1/4 c. finely minced parsley Preheat oven to 400F.

Directions

  1. Place potato pcs in roasting pan. Place pepper slices, cut side up, in a second pan. Combine oils; drizzle half over potatoes and half over the peppers.
  2. Sprinkle with coarse salt.
  3. Roast potatoes for 30-35 min; roast peppers for 20-25 min, or possibly till tender. Arrange potatoes and peppers on a platter, sprinkle with parsley and serve.
  4. Makes 6 servings.
