Baked Mashed Potatoes With Sour Cream And Garlic
Ingredients
- 8 lb Russet potatoes, peeled, cut in 1 in pcs
- 12 ounce Cream cheese, room temperature, cut in pcs
- 1 1/3 c. Lowfat sour cream
- 1 Tbsp. Finely minced garlic
- 3 Tbsp. Butter, melted
Directions
- Cook potatoes in large pot of boiling salted water till tender, about 20 min. Drain potatoes and return to same pot. Add in 12 ounces of cream cheese and mash well. Fold in lowfat sour cream and minced garlic. Season potatoes to taste with salt and pepper. Transfer to 15x10x2-inch glass baking dish.
- Drizzle with melted butter.
- Preheat oven to 375 . Bake potatoes uncovered till heated through, about 30 min.
