  • Baked Hush Puppies

    Ingredients

    • Nonstick cooking spray
    • 1/2 c. Yellow cornmeal
    • 1/4 c. Unbleached all-purpose flour
    • 3/4 tsp Baking pwdr
    • 1/2 tsp Granulated sugar
    • 1/4 tsp Salt (optional)
    • 1/2 tsp Celery flakes
    • 1/4 tsp Cayenne pepper
    • 1 x Egg white beaten
    • 1/4 c. Skim lowfat milk
    • 1 Tbsp. Vegetable oil
    • 1/4 c. Finely-minced scallion, including green top

    Directions

    1. Heat oven to 425 degrees. Using nonstick cooking spray, coat miniature muffin pan (1 3/4-inch c.).
    2. In medium-sized bowl, combine cornmeal, flour, baking pwdr, sugar, salt, celery flakes, and cayenne pepper; stir till well blended.
    3. In a small bowl, combine egg white, lowfat milk, and vegetable oil; stir well. Add in liquids to dry ingredients; stir just till blended. Stir in scallion.
    4. Spoon about 1 Tbsp. batter into each muffin c.. Bake till hush puppies are golden, about 15 to 20 min. Remove immediately; serve hot.
    5. This recipe yields 12 servings.
