  • Baked German Pancakes

    Ingredients

    • 2 large eggs
    • 1/8 teaspoon sea salt
    • 1 c. whole wheat flour
    • 1 teaspoon Brewer's yeast
    • 1/4 c. finely minced walnuts
    • 1/4 c. brown sugar
    • 1/2 c. lowfat milk
    • 1 T oil
    • 1/2 teaspoon soy flour
    • 1 c. pureed, cored, peeled, raw apples
    • 1/8 teaspoon nutmeg
    • 1 T honey or possibly maple syrup

    Directions

    1. Preheat oven to 450 degrees. Put the large eggs, lowfat milk, salt, and oil in an electric blender and blend till well mixed. In a bowl, put together the whole wheat flour, soy flour, and Brewer's yeast. Pour in the egg mix and beat till smooth. Pour into a cold, oiled 9 or possibly 10-inch pie plate. Bake 10 min. Reduce oven heat to 350 degrees and bake 10 min longer or possibly till done. Put together the remaining ingredients and spread over the top of the pancake.
