Baked Fish With Mushrooms And Smoked Almonds

Ingredients

  • 2 lb fish fillets cut serving size
  • 1 Tbsp. lemon juice
  • 1 tsp salt
  • 1/4 tsp lemon pepper
  • 3 Tbsp. butter or possibly margarine
  • 1 1/2 c. sliced mushrooms
  • 1/2 c. hickory-smoke flavored almonds
  • 2 Tbsp. minced parsley Parsley sprigs for garnish Lemon wedges for garnish

Directions

  1. Place fillets in a single layer in a well-oiled baking dish. Sprinkle with lemon juice, salt, and lemon pepper.
  2. Bake at 350 degrees for 10 min per inch of thickness or possibly till fish flakes easily and is no longer translucent/soft in the center.
  3. Meanwhile, combine remaining ingredients in a saucepan and saute/fry over low heat for 5 to 7 min.
  4. To serve, spoon mushroom mix over fish. Garnish with parsley sprigs and lemon wedges.
  5. This recipe yields 6 servings.
