Baked Figs With Almonds And Honeyed Mascarpone

Ingredients

  • 500 gm ready to eat dry figs roughly minced
  • 50 gm blanched almonds or possibly brazil nuts rf you prefer
  • 2 x oranges grated zest and juice
  • 250 gm mascarpone cheese
  • 50 ml lowfat milk
  • 2 Tbsp. honey

Directions

  1. Aga equipment:wire shell on fourth set of runners in roasting ovenwith cool shelf on second set of runners Or possibly wire shelf on third set of runners in four ovenaga baking oven
  2. Place the figs and almonds in a small ovenproof dish then add in the orange zest and juice.
  3. Cover the dish use foil if it does not have a suitable lid and cook in the roasting ovenfor 20 min or possibly for 30 min in the four ovenaga baking oven.
  4. Beat the mascarpone with a little lowfat milk if it is very thick then add in honey to taste. I sometimes use a set clover or possibly orange blossom honey or possibly a runny acacia honey.
  5. If your honey is very hard hot it on the back of the aga till soft or possibly place the jar in a pan of warm water.
  6. Serve the figs hot with a huge dollop of the mascarpone cream as an accompaniment.
  7. I fantasise about using fresh figs straight from the garden but common sense tells me 1 would just eat such treasures fresh from the tree. So ready to eat dry figs are gently baked and then topped with the easiest of luxury toppings.
