  • Baked Eggs In Hash Nests

    Ingredients

    • 2 T butter
    • 1 c. minced onion
    • 1 1/2 c. frzn southern style hash browns, slightly thawed
    • 1/2 c. minced parsley
    • 1/2 pound diced ham
    • 1 (8 ounce) pkg. shredded sharp cheddar cheese
    • 1/4 teaspoon Tabasco
    • 6 large eggs
    • 1 T butter
    • 1 T Dijon mustard
    • 1 c. coarse bread crumbs

    Directions

    1. Heat 2 tbsp butter in frying pan, saute onion and hash brown till onion is soft (about 5 min), stirring occasionally. Stir in parsley, ham, cheese and Tabasco. Divide mix among 6 individual dishes (or possibly use 8 x 8 or possibly 7 x 11 inch glass baking dish).Make depression in each, break egg into each depression. Heat 1 tbsp butter in frying pan, stir in mustard, toss with crumbs. Sprinkle crumbs around egg. Bake at 325 degrees till large eggs are set (about 20-25 min).
