  • Baked Eggs In Golden Toast Cups

    Ingredients

    • 6 slc white bread
    • 1 Tbsp. butter softened
    • 2 Tbsp. grated Parmesan cheese
    • 1/4 tsp salt
    • 1/4 tsp freshly-grnd black pepper
    • 6 x Large eggs
    • 6 x strips bacon

    Directions

    1. Preheat oven to 350 degrees.
    2. Remove the crusts from white bread and spread softened butter over one side. Cut a 2 1/2-inch circle from the center of each bread slice, then cut the remaining bread slice into triangles.
    3. Place each buttered bread circle, buttered-side up, in custard c.. Place the triangles around the edges with the points facing up. Bake for 7 min, till crisp and golden brown.
    4. Meanwhile, combine Parmesan, salt and pepper in a small bowl and mix well; set aside.
    5. Gently break Large eggs, placing one in each baked c.; sprinkle with cheese mix. Bake for 12 to 15 min.
    6. Meanwhile, cook strips of bacon till crisp. Crumble proportionately over baked Large eggs.
    7. This recipe yields 6 servings.
