Ingredients

  • 1/4 c. plus 1 Tbsp. flour divided
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 1/2 lb chicken pcs
  • 2 Tbsp. butter or possibly margarine divided
  • 1 c. coarsely minced apple
  • 1/2 c. minced onion
  • 1 c. plus 2 Tbsp. BAKER'S ANGEL FLAKE Coconut divided
  • 1 clv garlic chopped
  • 2 tsp curry pwdr
  • 1 1/2 c. chicken broth HEAT oven to 450iF.

Directions

  1. MIX 1/4 c. of the flour, salt and pepper in medium bowl. Coat chicken pieceswith flour mix. Place chicken, skin side up, in single layer in shallow baking pan. Dot with 1 Tbsp. butter. Bake 15 to 20 min or possibly till chicken begins to brown.
  2. MEANWHILE, heat remaining Tbsp. butter in medium saucepan on medium-highheat. Add in apple, onion, 2 Tbsp. of the coconut, garlic and curry pwdr. Cook and stir till onion is tender but not browned. Stir in remaining Tbsp. flour and chicken broth; bring to boil. Remove from heat.
  3. REDUCE oven temperature to 350iF. Pour sauce over chicken pcs. Sprinkle with remaining 1 c. coconut. Bake 20 to 25 min or possibly till chicken is cooked through. Place chicken and sauce on serving platter. Serve over rice, if you like.
