  • Baked Chicken With Orzo

    Ingredients

    • 1 x frying chicken, quartered
    • 1 Tbsp. butter
    • 1 3/4 c. orzo
    • 1 1/2 tsp salt
    • 1/2 tsp oil
    • 1 c. chicken broth
    • 6 ounce tomato paste
    • 1/4 tsp pepper plain yogurt

    Directions

    1. Place the chicken in a shallow roasting pan, skin side up. Add in 1/3 c. water.
    2. Dot with butter. Salt and pepper to taste. Bake in 350F oven 1 hour. Fifteen min before chicken is done, bring 2 qts of water to boil, stir in orzo, 1/2 tsp. salt and oil. Parboil 5 min. Drain orzo in colander. Rinse in cool water. Drain. Remove baked chicken from oven. Place in dish. Cover tightly with heavy-duty foil. Set aside. Turn oven to 425 F. Add in 1 c. water and broth to roasting pan. Stir to loosen drippings. Add in tomato paste, 1 tsp. salt, pepper and liquid removed orzo. Bake 30 min or possibly till orzo has absorbed liquid and is tender. Adjust salt. Sprinkle orzo with Parmesan cheese or possibly dollops of yogurt. Serve with baked chicken.
