  • Baked Chicken With Cider And Apples

    Ingredients

    • 3 lb Meaty chicken pcs
    • 2 c. Apple cider
    • 1/2 c. Flour
    • 1 tsp Cinnamon
    • 1 tsp Grnd ginger
    • 1/2 tsp Salt
    • 1/4 tsp Freshly grnd pepper
    • 1 Tbsp. Brown sugar, up to 3 Tablespoons
    • 2 Tbsp. Applejack, or possibly cider
    • 2 med Cooking apples, cored, and into this wedges

    Directions

    1. 1. Wash the chicken pcs, pat dry and remove the skin and visible fat, if you like. Place the chicken pcs in a large nonmetal bowl or possibly container and pour the cider over the chicken. Cover and chill overnight, turning the pcs occasionally.
    2. 2. Preheat the oven to 350 deg. Remover the chicken from the cider, reserving the cider/
    3. 3. In a shallow bowl or possibly plastic bag, combine the flour, ginger, cinnamon, salt and pepper. coat the chicken pcs with the flour mix. If using a plastic bag, add in the chicken pcs to the bag, a few at a time. close the bag and shake to coat the pcs well.
    4. 4. Place he chicken pcs in a 3 qt rectangular baking dish. Bake in the 350 deg. oven for 30 min.
    5. 5. Meanwhile, in a medium mixing bowl, combine 1 1/2 c. of the reserved cider, the brown sugar and applejack or possibly cider. Stir in the apple slices.
    6. 6. After the chicken has baked for 30 min, pour the apple mix over it, then continue to bake about 25 min more or possibly till chicken is tender and no longer pink, basting occasionally with the pan juices.
