Baked Chicken Taquitos

We love love love Mexican food at our house so when Alessa and I decided to feature Mexican food as our theme this month I knew the family would love it! This particular recipe is so very easy and I tried to “healthy” it up a bit by baking instead of deep frying the taquitos. The result was delicious. You could use beef, pork or chicken for the filling and the range of items to dip them in are endless. I used two of my favorites, salsa and avocados! Bake up a batch of these tasty treats tonight. Your family will love them.

Ingredients

  • 8 soft corn tortillas
  • 1 1/2 cup cooked chicken breast, shredded
  • 2 teaspoons hot sauce

Directions

  1. Boil, bake, or grill 1-2 to chicken breasts (enough to make 1 1/2 cups shredded chicken). Let the chicken cool and then shred it in a bowl. Pour in the hot sauce and toss the chicken until it is completely coated with the hot sauce. In a medium hot skillet place one tortilla at a time in the pan (approximately 30 seconds a side) until it is soft and pliable. Take from skillet and spoon chicken/hot sauce mixture onto one end of the tortilla. This will be approximately 4 tablespoons of the chicken mixture per tortilla. Start rolling from the chicken mixture end in a continuous roll until you have formed a “tube” with the tortilla. Place it seam side down in a baking dish. Repeat this process until all the tortillas are warmed in the pan and the chicken mixture is rolled in the tortillas. Place the pan in a 425 degree oven for approximately 25 minutes or until the torillas begin to turn golden brown.
