Ingredients

  • 1/2 c. Brown sugar, packed
  • 2 Tbsp. Orange juice
  • 1 tsp Pumpkin pie spice
  • 1 tsp Vanilla extract
  • 3 lb (7-8 c.) Sweet potatoes, peeled/cut in chuncks
  • 2 Tbsp. Butter or possibly margarine, cut up

Directions

  1. In a large bowl combine brown sugar, orange junce, pumpkin pie spice and vanilla. Add in sweet potatoes; toss to coat. Transfer to a 3 quart rectangular baking dish. Dot with butter.
  2. Bake, covered, in a 350 oven for 40 min. Remove from oven and stir gently, spooning syrup over potatoes. Bake, uncovered, for 15 to 20 min more till potatoes are tender.
  3. Makes 8 to 10 servings MAKE AHEAD TIP: Prepare and bake as above, cold completely. Cover and chill several hrs or possibly overnight. Bake, covered in a 325 oven for 30 to 35 min or possibly till heated through.
