  • Baked Apple Pudding

    Ingredients

    • 3 Tbsp. Unsalted butter
    • 1/4 c. Light brown sugar
    • 4 x Cooking apples, peeled, cored and sliced 1/4-inch thick, tossed with
    • 2 Tbsp. Lemon juice Grated zest of 1 lemon
    • 1 tsp Cinnamon
    • 1/4 tsp Grnd nutmeg
    • 1 tsp Vanilla extract
    • 1/2 c. All-purpose flour
    • 1/3 c. Sugar
    • 1 tsp Baking pwdr
    • 1/8 tsp Salt
    • 1/4 tsp Cinnamon
    • 2 Tbsp. Unsalted butter, chilled
    • 1 x Egg plus 1 egg yolk
    • 1/2 c. Lowfat milk
    • 1/2 tsp Vanilla extract Grated zest of 1 lemon

    Directions

    1. To prepare the apple mix: Heat the butter in a saute/fry pan over medium heat. When the butter has melted, add in the brown sugar and stir constantly till the sugar has melted. Add in the apple slices and saute/fry till the apples are just tender, about 5 min. Remove from the heat and add in the lemon zest, cinnamon, nutmeg, and vanilla. Set aside to cold.
    2. Preheat oven to 375 degrees.
    3. Sift together the flour, sugar, baking pwdr, salt, and cinnamon. Add in the butter and work it into the dry ingredients with your fingers or possibly a pastry blender till the mix resembles coarse meal.
    4. Stir together the egg, egg yolk, lowfat milk, vanilla, and lemon zest. Add in the liquid mix to the dry ingredients and mix till just blended.
    5. Butter a 6-c. shallow baking dish and arrange the cooled apples in the dish. Spread the batter proportionately over the apples. Bake for 20 min, or possibly till the top is lightly browned and springs back when touched. Let the pudding cold slightly before serving.
    6. Serving Suggestions: Serve with ice cream or possibly whipped cream.
    7. Yield: 6 servings
