    A wonderful New England Classic Breakfast. Baked Apples, Cinnamon and a wonderfully light baked pancake!! Yum!

    Ingredients

    • Ingredients:
    • Topping
    • 3-4 medium Apples, peeled, cored and sliced
    • 1 cup Brown sugar
    • 3/4 stick Butter (room temp)
    • 3 Tbsp Cinnamon
    • Pancake Batter
    • 4 eggs
    • 2 tbsp Butter (melted)
    • 2/3 cup Flour (sifted)
    • 2/3 cup Milk
    • 1 tsp Vanilla
    • 1/2 tsp salt
    • 2 tbsp Sugar

    Directions

    1. Preheat Oven to 400°
    2. In a Cast Iron Skillet, Melt 3/4 stick of butter.
    3. Remove from heat
    4. Arrange apple slices at bottom.
    5. Top with Brown Sugar and Cinnamon.
    6. Prepare Batter:
    7. Beat Eggs, Milk and Sugar and Vanilla until light and fluffy.
    8. Add Flour and Salt.
    9. Combine.
    10. Add the 2 tbsp melted butter.
    11. Mix well.
    12. Pour batter over apples.
    13. Bake in 400° oven for 40 minutes or until pancake is light, puffy and golden brown.
    14. Remove from oven and invert onto serving platter.
    15. Enjoy!
