Baked Acorn Squash with Pine Nuts and Garlic

Delicious and beautiful side dish. Pile it up and serve it for company! (Or eat it with your hands in front of the baseball game, like me.)

It is easier to slice the squash if you microwave it on high for a few minutes - just stick the whole thing in the microwave as is.

I played with all the measurements to fit the size of my squash and used more pine nuts and olive oil.

Ingredients

  • 2 small acorn squash (about 2 lbs)
  • 1 tablespoon olive oil
  • 1/4 tsp salt
  • 8 cloves garlic, halved
  • 1 tablespoon pine nuts
  • 1/4 tsp freshly ground pepper

Directions

  1. Preheat oven to 400 degrees.
  2. Coat shallow baking dish (or cookie sheet) with cooking spray.
  3. Cut squash crosswise into rings 1/2 inch thick.
  4. Place the rings in baking dish in a single shallow layer, overlapping slightly.
  5. Brush with oilve oil.
  6. Bake for 15 minutes.
  7. Meanwhile, in a small bowl, toss garlic and pine nuts with remaining olive oil.
  8. Sprinkle pine nuts and garlic evenly over the squash rings and continue baking until pine nuts are lightly browned (or squash looks done), 10-15 min. more.
  9. Season squash with salt and pepper.
