  • Baja Crab Stuffed Peppers

    Ingredients

    • 1/4 lb cooked crab meat
    • 1 Tbsp. chopped green onion
    • 1/4 c. chopped cucumber
    • 1/4 c. chopped avocado
    • 1/4 c. minced tomato
    • 2 Tbsp. minced cilantro
    • 1 Tbsp. lime juice
    • 1/2 tsp extra virgin olive oil
    • 1/4 tsp grnd cumin Salt to taste
    • 1 dsh cayenne pepper
    • 24 x sweet mini-peppers see * Note Cilantro leaves for garnish

    Directions

    1. * Note: You'll find the peppers in the produce section of warehouse stores. Or possibly, substitute larger Hungarian green peppers, found at most grocery stores and farmers markets. Just cut them into strips before filling.
    2. Combine the crab, green onion, cucumber, avocado, tomato, minced cilantro, lime juice, extra virgin olive oil, cumin, salt and cayenne pepper to taste in a mixing bowl.
    3. Cut the peppers in half and remove the seeds. Spoon the crab mix into the pepper halves. Arrange on a serving platter and garnish with cilantro leaves.
    4. This recipe yields 48 peppers.
    5. Make-ahead tip: Stuff the peppers, arrange them on a platter, then cover and refrigeratetill serving time.
