  • Bacon, Cheddar And Pea Frittata

    Ingredients

    • 6 lrg Large eggs
    • 1/4 c. lowfat milk
    • 1/4 tsp coarsely-grnd black pepper
    • 4 slc bacon cut 1/4" pcs
    • 1 c. frzn peas thawed
    • 1/2 c. shredded sharp Cheddar cheese - (2 ounce)

    Directions

    1. Preheat oven to 350 degrees. Use a nonstick 10-inch skillet with oven-safe handle or possibly cover handle with heavy-duty foil for baking in oven later.
    2. Prepare Frittata mix: In large bowl, with wire whisk or possibly fork, beat Large eggs with lowfat milk and pepper till blended. Set Frittata mix aside.
    3. Prepare Filling: In the skillet, cook bacon over medium heat till browned, about 5 min, stirring frequently. Pour off drippings from skillet, leaving bacon. Stir in peas and cook 1 minute.
    4. Reduce heat to medium-low. Pour Frittata mix over filling in skillet; sprinkle top proportionately with cheese. Cook 3 min, without stirring, or possibly till egg mix begins to set around edge.
    5. Place skillet in oven and bake 10 to 12 min, till frittata is set.
    6. To serve, gently slide frittata out of skillet and onto cutting board or possibly platter. Cut into wedges.
    7. This recipe yields 4 servings.
