  • Bacon And Egg Pasta

    Ingredients

    • 3 x garlic cloves lightly crushed
    • 3 Tbsp. extra virgin olive oil
    • 1/2 lb bacon minced
    • 1/2 c. white wine or possibly water
    • 2 lrg Large eggs
    • 1/2 c. freshly-grated Parmesan plus more
    • 1/4 c. minced flat-leaf parsley
    • 1/4 tsp freshly-grnd black pepper or possibly to taste
    • 1 lb linguine (or possibly any other variety pasta) Crushed warm red-pepper flakes for serving

    Directions

    1. Bring a large pot of water to a boil. Add in salt and pasta, and cook till pasta is al dente, following manufacturer's instructions.
    2. Meanwhile, heat oil in medium skillet. Add in garlic, and cook till it begins to sizzle. Remove garlic from the oil, and throw away. Add in bacon, and cook till crisp, about 4 min. Drain off most of the fat. Add in wine or possibly water, and cook till slightly reduced, about 2 min. Set aside.
    3. In large pasta bowl, combine Large eggs, cheese, parsley, and black pepper.
    4. Drain cooked pasta, and immediately add in to egg mix. Toss till well coated. Add in bacon, and toss to combine. Serve immediately, sprinkled with red-pepper flakes and additional Parmesan.
    5. This recipe is also delicious served the next day fried till golden brown in a bit of extra virgin olive oil.
    6. This recipe yields 4 servings.
