Bacon and Cheddar Cheese Mini Muffins

A perfect mini muffin for tailgating or a quick morning breakfast as you are running out the door. Warm or cold these muffins hit the spot and the bacon lovers in your house will adore them!

Ingredients

  • 2 cups baking mix
  • 2/3 cup milk
  • ΒΌ cup vegetable oil
  • 1 egg
  • 1 cup shredded cheddar cheese
  • 2/3 cup bacon cooked and crumbled (about 6 slices)

Directions

  1. Heat oven to 400 degrees. Spray mini muffin pan with cooking spray.
  2. Cook bacon and set aside to cool before crumbling. Mix all of the ingredients except the bacon and cheese. Fold in the cheese and bacon. Spoon batter into the mini muffin pan and bake for 12 minutes. Makes 24. Store in an airtight container in the fridge.
