    Bacon and Broccoli Muffins

    Moreish breakfast muffins (well for any time of day really) that are not that bad for you at all :-)

    Ingredients

    • 225g self raising flour
    • 175ml skimmed milk
    • 100g cooked broccoli
    • 3-4 cooked, rindless back bacon, chopped
    • 75g mild cheese
    • 50ml olive oil
    • 2 tsp wholegrain mustard
    • 1 beaten egg

    Directions

    1. Mash or blend the broccoli in a bowl.
    2. Sift in the flour with a pinch of salt. Add the cheese.
    3. In another bowl, mix the rest of the ingredients.
    4. Slowly add the liquid to your veg mixture and mix well.
    5. Spoon into greased muffin moulds halfway, then bake at 200 degrees C for about 25 minutes.

                I don't understand why this is a low-fat recipe! Although it sounds tasty, it is far from low-fat. 70% of the calories are from fat!!!!!

                  Thanks for your comment - to be honest, I probably have quite a jaded view when it comes to fat content. I never look at foods in relation to calories, and when it comes to fat content, I just try to aim below 5g of total fat per serving, or per 100g when buying stuff - in this case, I've gone over that too it seems ;-)

                  I'm not entirely sure how the nutritional values are generated on CES but another thing to consider that it's probably the olive oil that's whacked the percentage up - most oils have 100% fat I think, but using healthier ones like olive oil that contain mainly good fats can't be a bad thing :-)
