Aztec Spaghetti
I love Italian food (gradma was Italian) and Mexican food. This is a very tasty dish. The recipe is for 4 people. The bell peppers' colors are to add presentation but they can simply be green. Ingredients
- 1 package of spaghetti (or other pasta)
- 1 cup of diced cooked nopales (cactus pads)
- 1 diced red bell pepper
- 1 diced yellow bell pepper
- 1 small finily diced onion
- 1 sliced garlic clove
- 1/2 cup of sliced black (or green) olives
- 3 spoons of roasted sliced almonds
- parmesar cheese
- salt and pepper
Directions
- While you cook the pasta in salted water, prepare the dressing.
- In a large pan, saute in olive oil the garlic and onion.
- Once they are soft, add the peppers and saute for 2 minutes.
- Add the nopales and saute for about 5 minutes, adding the salt and pepper to taste.
- Add the olives ( I like vinegar so I add a bit of the olives' juice).
- Drain the pasta and add to the dressing, toss gently mixing well.
- Sprinkle the almond and the cheesse and serve.
