  • Aztec Spaghetti

    I love Italian food (gradma was Italian) and Mexican food. This is a very tasty dish. The recipe is for 4 people. The bell peppers' colors are to add presentation but they can simply be green.

    Ingredients

    • 1 package of spaghetti (or other pasta)
    • 1 cup of diced cooked nopales (cactus pads)
    • 1 diced red bell pepper
    • 1 diced yellow bell pepper
    • 1 small finily diced onion
    • 1 sliced garlic clove
    • 1/2 cup of sliced black (or green) olives
    • 3 spoons of roasted sliced almonds
    • parmesar cheese
    • salt and pepper

    Directions

    1. While you cook the pasta in salted water, prepare the dressing.
    2. In a large pan, saute in olive oil the garlic and onion.
    3. Once they are soft, add the peppers and saute for 2 minutes.
    4. Add the nopales and saute for about 5 minutes, adding the salt and pepper to taste.
    5. Add the olives ( I like vinegar so I add a bit of the olives' juice).
    6. Drain the pasta and add to the dressing, toss gently mixing well.
    7. Sprinkle the almond and the cheesse and serve.
