Aztec Rice 400pp
Ingredients
- 24 pounds long grain rice
- 1.5lbs garlic, chopped
- 4 cups vegetable shortening
- 28 pounds tomatoes, chopped
- 28 pounds black beans, canned, drained
- 28 pounds corn, frozen
- 3/4 cup black pepper
- 1 cup chili powder
- 2 cups ground cumin
- 8 cups green onion, chopped
Directions
- Prepare rice according to package directions.
- Add remaining ingredients. Mix well. Simmer 5 minutes.
- Divide rice equally between steam table pans. CCP: Hold for service at 140 F. or higher.
