  • Ayalla's Banana Bread

    Ingredients

    • 3 x Bananas, very ripe
    • 1 c. Sugar
    • 1/2 c. Shortening (butter)
    • 2 x Large eggs
    • 3 Tbsp. Lowfat yoghurt or possibly lowfat sour cream
    • 2 c. Flour
    • 1 tsp Baking soda
    • 1 c. Walnuts, minced Rum, vanilla, or possibly amaretto (optional)

    Directions

    1. Preheat the oven to 350 degrees F. Cream the shortening and sugar. Fold in the bananas. Fold in the remaining ingredients. Pour into a greased loaf pan. Bake 1 hour 15-20 min at 350 degrees F.
    2. NOTES:* This recipe is from my friend Ayalla - It makes a heavy, but moist, loaf of banana bread.
    3. * If you use more than 3 normal-size bananas, I suggest which you lower the oven temperature and cook for a while longer. Otherwise, the crust comes out almost overcooked while the middle remains moist and almost undercooked.
    4. Difficulty: easy.
    5. Time:Preparation: 10 min; baking: at least 95 min. Allow some time for cooling.
    6. Precision: Approximate measurement OK.
