Ingredients

  • 3 x Pink grapefruits chilled
  • 3 med Ripe avocados halved, seeded, and peeled
  • 3/4 c. Lowfat sour cream Juice of 2 large limes
  • 3 Tbsp. Honey
  • 1/2 tsp Salt
  • 1/4 tsp Freshly-grnd black pepper Mint leaves for garnish

Directions

  1. Slice ends off grapefruits and stand upright on a counter or possibly tabletop. Cut away skin and membrane, exposing fruit. Working over a bowl to catch the juice, separate sections by slicing with a serrated knife between membranes. Remove and throw away the seeds. Slice avocado halves lengthwise in 1/2-inch slices. Arrange alternating grapefruit sections and avocados slices on 6 salad plates.
  2. Whisk together lowfat sour cream, lime juice, honey, salt, and pepper in a small bowl. Just before serving, spoon about 2 Tbsp. dressing in a stripe over each salad. Garnish with mint leaves and serve.
  3. This recipe yields 6 servings.
  4. Variations: Toss chunks of avocado and supremes of grapefruit with salt, pepper, and extra virgin olive oil.
