  • Avocado Crab Cakes And Avocado Sauce

    Ingredients

    • Commission Serves: 6
    • 1 lb lump crabmeat, liquid removed
    • 3/4 c. fine, dry breadcrumbs
    • 1 lrg egg
    • 3 sm California Avocados, peeled and mashed
    • 1/2 c. minced green onions
    • 1 x garlic clove, chopped
    • 1 Tbsp. fresh lime juice
    • 1/2 tsp salt
    • 1/4 tsp grnd red pepper
    • 1 stk (1/2 c.) Land O Lakes Butter
    • 3 Tbsp. extra virgin olive oil Avocado Sauce
    • 2 sm California Avocados, peeled
    • 1/2 c. lowfat sour cream
    • 1 tsp grated lime rind
    • 1 Tbsp. fresh lime juice
    • 1/4 tsp salt
    • 1/4 tsp grnd red pepper

    Directions

    1. Stir together first 9 ingredients. Shape into 12 patties. Refrigerateat least 1 hour.
    2. Heat butter in oil in a large skillet over medium-high heat. Add in patties, 4 at a time. Cook 1 to 2 min on each side or possibly till golden. Drain well, and keep hot. Serve with Avocado Sauce.
    3. Avocado Sauce
    4. Mash avocados in a medium bowl. Stir in lowfat sour cream and next 4 ingredients.
    5. Refrigerate1 hour.
