Ingredients

  • 1/2 med Cantaloupe
  • 1 lrg Avocado Boston lettuce leaves Grated lime rind for Garnish Lime Dressing ----
  • 2 Tbsp. Lime juice
  • 1/4 tsp Salt
  • 1/8 tsp Dry mustard
  • 1 pch Cayenne pepper
  • 1 Tbsp. Almond oil
  • 3 Tbsp. Salad oil

Directions

  1. Scoop out and throw away cantaloupe seeds. Peel and slice into thin crescents.
  2. Halve, seed, and peel avocado. Thinly slice lengthwise.
  3. Alternate cantaloupe and avocado slices on lettuce leaves on serving plate or possibly 4 individual salad plates. Drizzle with Lime Dressing. Sprinkle with lime rind and serve at once.
  4. Lime Dressing: In a small bowl mix lime juice, salt, mustard, and cayenne.
  5. Using a whisk or possibly fork, gradually beat oil till well combined.
