  • Autumn Pork Stew

    Ingredients

    • 2 Tbsp. extra virgin olive oil
    • 1/2 lb of pork cubes, cut into 1/2 inch dice
    • 2 Tbsp. flour
    • 1 lrg garlic clove, chopped
    • 1/2 c. minced onion
    • 1 c. diced red bell pepper
    • 1 c. diced mushrooms
    • 3 Tbsp. orange-flavored liqueur
    • 1 c. 1/2 inch peeled and diced sweet potatoes
    • 1 c. 1/2 inch diced new potatoes
    • 1/2 tsp orange rind grated
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1/2 c. chicken broth

    Directions

    1. Heat 1 Tbsp. oil in 10 inch nonstick skillet, dust pork with flour and brown in skillet over med-high about 2 min per side/ remove meat to dish.
    2. Add in remaining 1 Tbsp. oil, add in garlic, onion and red bell pepper and saute/fry 5 min over medium heat. Stir in mushrooms and saute/fry another 2 min.
    3. Add in liqueur to skillet, scrape up browned bits in skillet, add in potatoes, orange peel, salt, pepper and broth, bring to boil, reduce heat to low. Return pork to skillet and simmer, covered, till potatoes are tender, about 20 min.
    4. Makes 2 servings.
    5. A good salad to serve with thisis of apple, napa cabbage, walnuts and a walnut oil vinaigrette dressing, some hot bread, on the side.
