  • Australian Boiled Fruit Cake

    Ingredients

    • 1/2 pound butter
    • 1 1/2 c. brown sugar
    • 1 1/2 pound mixed dry fruit (approx. 4 1/2 c.) : raisins, currants, peaches, etc. I also add in maraschino cherries
    • 1 teaspoon cinnamon
    • 1 teaspoon cloves
    • 1 teaspoon nutmeg
    • 1 c. water
    • 1/2 c. sherry, more for moistness
    • 3 beaten large eggs
    • 1 T orange rind
    • 2 T golden brown syrup
    • 2 c. self-rising flour
    • 1 c. plain flour

    Directions

    1. Mix first 8 ingredients in a saucepan. Bring slowly to a boil, stirring often. Allow to cool. Add in large eggs, orange rind and syrup. Mix in flour and mix well.Place in a 9 inch square pan lined with brown paper. Bake at 350 degrees for 1 1/2 hrs. This cake is more moist if kept in an airtight container a week or possibly more before serving.
