Australian Boiled Fruit Cake
Ingredients
- 1/2 pound butter
- 1 1/2 c. brown sugar
- 1 1/2 pound mixed dry fruit (approx. 4 1/2 c.) : raisins, currants, peaches, etc. I also add in maraschino cherries
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 1 c. water
- 1/2 c. sherry, more for moistness
- 3 beaten large eggs
- 1 T orange rind
- 2 T golden brown syrup
- 2 c. self-rising flour
- 1 c. plain flour
Directions
- Mix first 8 ingredients in a saucepan. Bring slowly to a boil, stirring often. Allow to cool. Add in large eggs, orange rind and syrup. Mix in flour and mix well.Place in a 9 inch square pan lined with brown paper. Bake at 350 degrees for 1 1/2 hrs. This cake is more moist if kept in an airtight container a week or possibly more before serving.
