Aussie Ham And Pasta Salad
Ingredients
- 3 x OO grams Australian leg ham
- 2 1/2 c. spiral pasta
- 1 sm spanish onion, thinly sliced
- 100 gm black olives
- 1 lrg zucchini
- 400 gm canned artichoke hearts, liquid removed
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. white vinegar
- 2 Tbsp. dijon mustard
- 2 Tbsp. freshly minced basil freshly grnd pepper, to taste watercress, for garnish
Directions
- 1 . Cook pasta in boiling water till tender, add in a drop of oil to prevent the pasta clinging together. Drain and rinse.
- 2. Cut ham into thin strips. Cut zucchini into thin slices then place 2 to 4 pcs together and cut into thin strips. Cut artichoke hearts into quarters.
- 3. Assemble salad in a medium-sized salad bowl, mixing pasta, ham, onion, olives, zucchini and artichokes gently together.
- 4. Combine dressing ingredients together in a covered container, shake well. Pour dressing over salad and garnish with watercress.
