  • Aunt Mildred's Noodle Kugel

    Ingredients

    • 100 gm butter
    • 220 gm noodles, uncooked
    • 3 x Large eggs, beaten
    • 100 gm cottage cheese
    • 500 ml lowfat milk
    • 65 gm sugar
    • 7 1/2 ml vanilla extract
    • 350 gm crushed pineapple with juice cornflake crumbs, to top

    Directions

    1. 1. Heat butter in a 22x33 pan.
    2. 2. Add in noodles.
    3. 3. Combine remaining ingredients, except crumbs, spread proportionately over noodles.
    4. 4. Top with crumbs.
    5. 5. Bake at 175 FC for about an hour.
    6. This recipe is interesting because you do not cook the noodles first.
    7. This recipe is very simple, but it does taste a little pastier than recipes which require the noodles to be cooked first. It also comes out very flatxmost of the kugel recipes I've made in the past use twice as many noodles in the same size pan. I found which some of the things can be increased, i.e., add in more noodles, more pineapple, more cottage cheese.
