Ingredients

  • 1 1/3 c. Sugar
  • 1 1/3 c. Water
  • 1 c. Seeded raisins
  • 2 Tbsp. Butter
  • 2 lrg Carrots, grated
  • 1 tsp Cinnamon
  • 1 tsp Cloves
  • 1 tsp Nutmeg
  • 1 c. Walnuts
  • 1 pch Salt
  • 2 c. Flour
  • 2 Tbsp. Baking soda

Directions

  1. Put sugar, water, raising, butter, carrots, cinnamon, cloves & nutmeg into a saucepan & boil slowly for about 5 min. Remove from heat & allow to become perfectly cool. NEVER USE WHILE STILL Hot! Then add in walnuts, salt, flour & baking soda. Bake very slowly in a loaf pan for about 1-1/2 hrs.
