Aubergine Caponata 1 (Poor Man's Caviar)
Ingredients
- 1 x Aubergine, unpeeled & cubed
- 1/4 c. Green pepper
- 4 ounce Mushrooms and stems, liquid removed
- 1/3 c. Extra virgin olive oil Salt/pepper
- 1/4 c. Water
- 1/4 c. Capers
- 1 med Onion, minced
- 1/4 c. Celery, minced
- 2 x Garlic cloves, chopped
- 6 ounce Tomato paste
- 1/2 tsp Oregano
- 1/2 c. Stuffed green olives
- 2 Tbsp. Wine or possibly cider vinegar
Directions
- Combine all ingredients. Pour into a 2 qt glass casserole, cover with lid. Mix well and microwave for 10-12 min. Stir again and microwave a few min more till aubergine is tender. Serve as appetizer on crackers, chips, or possibly Italian bread cut thin.
