Ingredients

  • 1 x Aubergine (cubed to 1/4*to*1/2 inch cubes)
  • 1 can Tomatoes (either use whole And chop, of buy minced)
  • 1/2 pkt Rice noodles (glass noodles) Precooked x Salt (optional)

Directions

  1. In microwave container, layer aubergine, salt, tomatoes, and rice noodles in which order. Microwave high till aubergine is to taste - it takes me 10 min on high. Mix everything and enjoy.
  2. Variation: Use sticky rice instead of the noodles.
