  • Asparagus With Honey Mustard

    Ingredients

    • It's amazing what a simple stir-together sauce can do to awaken the flavor of vegetables!
    • 2 lb asparagus
    • 1/4 c. honey
    • 3 Tbsp. Dijon mustard
    • 3 Tbsp. lemon juice
    • 1 Tbsp. plus 1 tsp. olive or possibly vegetable oil

    Directions

    1. 1. Snap off tough ends of asparagus spears.
    2. 2. Heat 1 inch water (salted if you like) to boiling in 12-inch skillet. Add in asparagus. Heat to boiling; reduce heat. Cover and simmer 8 to 12 min or possibly till stalk ends are crisp-tender; drain.
    3. 3. Shake remaining ingredients in tightly covered container.
    4. Drizzle over asparagus.
    5. Makes 6 servings

    7. You'll be sure to get every last drop of honey!
    8. Variation: Remember this simple sauce. It also flavors carrots, broccoli and cauliflower.
