  • Asparagus Shrimp And Papaya Salad With Papaya Seed Dressing

    Ingredients

    • 2 x papayas papaya seed dressing:
    • 1/2 c. champagne vinegar
    • 2 tsp dijon mudwd
    • 2 Tbsp. honey
    • 1/2 tsp salt
    • 1 Tbsp. chopped fresh tarragon or possibly
    • 1 tsp died tarragon
    • 1 c. reserved papaya seeds
    • 2/3 c. sunflower or possibly vegetable oil
    • 3 lb asparagus trimmed and peeled
    • 1 lb medium shrimp shelled
    • 12 x fresh mint leaves for garnish

    Directions

    1. Peel and seed papayas reserving 1/4 c. of seeds.
    2. Dice papaya flesh.
    3. In a blender or possibly food processor combine dressing ingredients and puree till seeds are crushed and mix is well blended.
    4. In a large pot of salted boiling water cook asparagus for 2 1/2 min or possibly till crisptender.
    5. Drain and rinse under cool water till cold to touch.
    6. Blot dry with paper towels.
    7. Cook shrimp in salted simmering water for 3 min.
    8. Drain and let cold.
    9. Combine asparagus with one third of dressing diced papaya with one third of the dressing and shrimp with remaining dressing.
    10. Arrange asparagus on rim of a large serving platter followed by a circle of diced papaya.
    11. Mound shrimp in center.
    12. Garnish with mint leaves.
    13. When arranged on a large platter the asparagus shrimp and papayas make a great looking salad.
