Asparagus Radish And Mushroom Salad
Ingredients
- 1 lb thin asparagus trimmed peeled and very thinly sliced on the diagonal
- 8 x red radishes halved lengthwise and thinly sliced
- 8 ounce mushrooms stemmed and thinly sliced
- 2 bn watercress stemmed and coarsely minced
- 1 bn chives cut into 1/2 .inch pcs
- 1 c. (3 ounces) asiago cheese shaved with a vegetable peeler dressing:
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. fresh orange juice
- 1 Tbsp. balsamic vinegar
- 3 Tbsp. extra virgin olive oil
- 1 tsp sweet warm mustard
- 1 x salt and freshly grnd pepper
Directions
- In a large bowl combine asparagus radishes mushrooms watercress chives and cheese.
- In a small bowl whisk dressing ingredients together till well blended. Toss with salad.
- Taste and adjust for seasoning.
