Ingredients

  • 2 x celery ribs
  • 3 Tbsp. fresh lime juice
  • 2 Tbsp. seasoned rice vinegar
  • 1 tsp finely-grated peeled fresh ginger
  • 2 x hard Asian pears cut 1/4"-thk matchsticks
  • 2 x scallions sliced thin diagonally
  • 1/4 c. fresh cilantro leaves
  • 1/2 tsp finely-minced fresh warm red chile or possibly to taste

Directions

  1. Peel strings from celery with a Y-shaped vegetable peeler and cut celery into 1/4-inch-thick matchsticks.
  2. Whisk together juice, vinegar, and ginger and stir in celery and remaining ingredients with salt and pepper, to taste. Let stand at room temperature 15 min before serving.
  3. This recipe yields 6 servings.
