  • Asian Chicken Lettuce Wraps {LeMoine Family Kitchen}

    Asian Chicken Lettuce Wraps! Sure, they are a little, ok a lot messy to eat but so worth it! Lean ground chicken in a simple homemade asian sauce, a crunchy piece of romaine lettuce, topped with carrot matchsticks, shredded red cabbage and cilantro! This one is so incredibly easy to throw together on a weeknight and all those colors means were on the healthy side of things.

    Ingredients

    • 2 lbs lean ground chicken
    • 6 cloves garlic, chopped
    • 6 oz shitake mushrooms, chopped
    • 1/2 cup low sodium soy sauce
    • 1/3 cup duck sauce
    • 3 Tbsp hoisin sauce
    • 1 Tbsp sesame oil
    • 1/4 cup water
    • scallions, sliced
    • romaine or iceberg lettuce {iceberg is a better vessel but romaine has more nutrition}
    • matchstick carrots {or shredded if you can't find
    • shredded red cabbage
    • fresh cilantro

    Directions

    1. In a bowl stir together the soy sauce, water, duck sauce, hoisin and sesame oil.
    2. In a large saute pan, over medium heat, add the olive oil, garlic and mushrooms. Cook until the mushrooms have cooked down a bit and the garlic is fragrant.
    3. Add in the chicken and break up the meat as it is cooking with either a wooden spoon or my favorite a potato masher.
    4. When the chicken is mostly cooked through go ahead and stir in the sauce and cook a few more minutes until the chicken is cooked through.
    5. Shut the heat and stir in a couple handfuls of scallion.
    6. I served all the fixings on a platter... the lettuce leaves, carrots, shredded cabbage and cilantro.
    7. Add a bit of chicken to the lettuce and top with all those gorgeous colored veggies.
