  • Arugula Salad With, Oranges, Pomegranate Seeds, Goat Cheese

    Ingredients

    • 3/4 c. extra-virgin extra virgin olive oil
    • 1/4 c. fresh lemon juice
    • 2 Tbsp. thawed frzn orange juice concentrate
    • 3/4 tsp coarse salt
    • 1/2 tsp freshly-grnd black pepper
    • 5 x oranges
    • 14 ounce arugula - (abt 16 c.)
    • 3/4 c. pomegranate seeds (or possibly dry cranberries)
    • 1 pkt soft fresh goat cheese - (5.5 ounce) crumbled
    • 1/3 c. finely-minced red onion

    Directions

    1. Whisk first 5 ingredients in bowl to blend. (Can be made 1 day ahead. Chill. Bring to room temperature and rewhisk before using.)
    2. Cut off peel and white pith from oranges. Cut oranges into 1/4- to 1/2-inch-thick rounds. Cut each round into quarters. Transfer orange pcs to large bowl. Add in remaining ingredients and toss to combine. Toss salad with sufficient dressing to coat and serve.
    3. This recipe yields 10 to 12 servings.
    4. Comments: Dry cranberries can be used in place of the pomegranate seeds in this recipe.
