Arugula Salad With, Oranges, Pomegranate Seeds, Goat Cheese
Ingredients
- 3/4 c. extra-virgin extra virgin olive oil
- 1/4 c. fresh lemon juice
- 2 Tbsp. thawed frzn orange juice concentrate
- 3/4 tsp coarse salt
- 1/2 tsp freshly-grnd black pepper
- 5 x oranges
- 14 ounce arugula - (abt 16 c.)
- 3/4 c. pomegranate seeds (or possibly dry cranberries)
- 1 pkt soft fresh goat cheese - (5.5 ounce) crumbled
- 1/3 c. finely-minced red onion
Directions
- Whisk first 5 ingredients in bowl to blend. (Can be made 1 day ahead. Chill. Bring to room temperature and rewhisk before using.)
- Cut off peel and white pith from oranges. Cut oranges into 1/4- to 1/2-inch-thick rounds. Cut each round into quarters. Transfer orange pcs to large bowl. Add in remaining ingredients and toss to combine. Toss salad with sufficient dressing to coat and serve.
- This recipe yields 10 to 12 servings.
- Comments: Dry cranberries can be used in place of the pomegranate seeds in this recipe.
