    Ingredients

    • 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
    • 1u00bd cups shredded cheddar cheese
    • 3 tablespoons mayonnaise
    • 1 tablespoon Dijon mustard
    • u00bd teaspoon dill
    • u00bc teaspoon garlic powder
    • pinch of cayenne pepper, optional
    • 4slices sourdough bread
    • 2 hard-boiled large eggs, sliced

We tend to have a lot of grilled cheese sandwiches, and that gets rather boring. So to change it up, try these Artichoke Melts. I always have cans of artichoke hearts in the pantry. It has slices of hard-boiled eggs on the bottom and is topped with a mixture of artichoke hearts, cheddar cheese, Dijon mustard, mayo, garlic powder, and some dill before going under the broiler until it's golden brown. Yum! Prep: 10 mins Cook: 5 mins Yields: 2 Servings Ingredients 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped 1½ cups shredded cheddar cheese 3 tablespoons mayonnaise 1 tablespoon Dijon mustard ½ teaspoon dill ¼ teaspoon garlic powder pinch of cayenne pepper, optional 4slices sourdough bread 2 hard-boiled large eggs, sliced Directions 1Preheat oven to 400° F. 2In a bowl, combine the artichokes, cheese, mayonnaise, mustard, dill and garlic powder; set aside. 3Place bread on a baking sheet; broil 4 in. from the heat until toasted. Turn over. Place egg slices on the untoasted side of bread; spread with artichoke mixture. Bake for about 5 - 8 minutes.
