Artichoke Dip With Spinach
Ingredients
- 1 x 10 oz package frzn, minced spinach thawed
- 2 x 6 oz jars marinated artichoke hearts
- 3 clv garlic, finely chopped
- 1/2 c. good quality mayonnaise
- 12 ounce cream cheese, room temperature
- 2 Tbsp. fresh lemon juice
- 1 c. Parmesan cheese (freshly grated or possibly from the green can)
- 1 1/2 c. dry bread crumbs
Directions
- Drain the spinach, place between paper towels and press out all of the liquid.
- Chop the artichoke hearts into medium pcs. Combine the spinach and minced artichokes, garlic and next 4 ingredients mixing well (do this by hand with a spatula or possibly spoon, don't use a mixer). Spoon into a lightly greased 11"x7" baking dish, sprinkle with the bread crumbs, bake at 375: for about 20-25 min. Serve with crackers or possibly bread sticks.
