Artichoke And Cherry Tomato Tarts
Ingredients
- 1 lrg egg yolk beaten lightly
- 1/4 c. lowfat sour cream Salt to taste Freshly-grnd black pepper to taste
- 1 sht frzn puff pastry - (1 lb) thawed, and cut into two 4" squares
- 1 c. quartered liquid removed marinated artichoke hearts
- 10 x vine-ripened cherry tomatoes halved
- 1 tsp fresh thyme leaves
Directions
- Preheat oven to 400 degrees. Lightly flour a baking sheet.
- In a bowl, whisk together yolk and lowfat sour cream, season with salt and pepper. Arrange pastry squares on baking sheet and spoon 1/4 of mix onto center of each. Top mix with artichokes and tomatoes. Spoon remaining lowfat sour cream mix over vegetables and sprinkle with thyme.
- Bake tarts in middle of oven till pastry is golden brown, about 12 min.
- This recipe yields 4 servings.
